Guar gum powder, also known as guar gum or guar gum extract, is a natural thickener and emulsifier. It is made from the seeds of the guar plant (Cyamopsis tetragonoloba), a legume that grows primarily in India and Pakistan. The powder is rich in dietary fiber and has various uses.Like tapioca and locust bean gum, guar gum can bind and thicken liquids, even in small quantities. It dissolves readily in water and forms a gel-like substance.

Guar gum is made by grinding the endosperm (the inner part) of the guar bean into a fine powder. It contains primarily galactomannan, a soluble polysaccharide. Guar bean fiber is made from the entire guar bean (including the husk and other parts), retaining primarily the natural fiber. Therefore, the fiber content is significantly higher than that of guar gum. Another difference is that it dissolves completely in water, unlike guar gum, which forms a jelly-like substance.
