AGEs, also called Advanced Glycation Endproducts, are mainly formed in food (exogenous glycation) and by metabolic processes (endogenous glycation).The Origin of AGEs
AGEs are formed by so-called non-enzymatic glycation (no enzymes are involved) in a number of steps.
These steps can take from days to months.
The food industry uses the knowledge of the Maillard reaction: a tasty preparation technique in which the browning of food leads to an improvement in taste.
However, as we now know, this also has disadvantages.
This reaction improves the taste, color, and texture of the prepared product, but it is precisely here that AGEs are formed.
Consequences for the body
All of this was first described over 100 years ago.
Then in 1992, Professor Schmidt discovered these resulting AGEs binding proteins in the form of cell binding receptor RAGE (the R stands for receptor.
Interaction with the RAGEs leads to the production of pro-inflammatory substances in the body such as TNF-alpha/beta-actin, VCAM-1, CRP, kappaB, IL-6, eNOS, 8-isoprostanes, etc., which in turn lead to the formation of oxidative stress.
