Tamari is a powerful, gluten-free Japanese soy sauce made from soybeans and koji (a unique Japanese mold). Terrasana Tamari is authentically made by true Japanese connoisseurs and requires a fermentation period of no less than 18 months.This takes place in 100-year-old cedar wood barrels. The taste of tamari is deliciously complex and contains all five tastes: salty, sour, sweet, bitter, and umami.
