Chia seeds are native to Mexico. The chia plant belongs to the mint family, but is also related to sage. They have been a food source for Native Americans for centuries. Aztec warriors ate chia while hunting, and other traditions tell of Southwestern Indians mixing chia seeds with water. It is possible that the Spanish conquerors (the conquistadors) brought the seed back to Spain around 1521 (after the conquest of Mexico). Chia was given the botanical name Salvia Hispanica in the 18th century by the botanist Carl von Linné. Chia grew only wild in Spain, and he mistakenly thought it was a native species.

Chia is grown in many South American countries. The main reason for this is the extremely high amount of omega-3 fatty acids in chia seeds. Omega-3 fatty acids are very important for humans, especially because the body cannot produce the omega-3 in chia seeds on its own. Chia also contains several vitamins, such as niacin, riboflavin, thiamine, and vitamin A, minerals such as potassium, calcium, and zinc, antioxidants, and high-quality protein. Compared to other seeds and grains, chia seeds offer the highest protein source (around 20 percent protein).

Chia seeds are sown in spring. Because the plant rots easily, it's best planted in areas without heavy rainfall. The plant reaches a height of up to one meter and is easily recognizable by its numerous blue flowers. The seeds are harvested in autumn.

Chia seeds can be eaten raw or dried and are also used as a thickener or as an ingredient in sauces. Add chia seeds to cereal, yogurt, or juice. They're also suitable for adding to bread dough, which also extends the shelf life!
