Phycocyanin is a natural blue pigment found in microalgae, including Spirulina. It gives these algae their characteristic deep blue color and is one of the most important colorants within this group.The pigment plays an important role in photosynthesis, the process by which algae convert sunlight into energy. In conjunction with chlorophyll and other pigments, phycocyanin can absorb light at wavelengths that would otherwise remain unused. This enables the algae to produce energy more efficiently.
What makes Phycocyanin special is that it occurs almost exclusively in blue-green algae and hardly in other food sources. Additionally, it is highly soluble in water, allowing it to be easily absorbed by the body.
