Guar gum powder, also known as guar gum or guar gum extract, is a natural thickening agent and emulsifier. It is made from the seeds of the guar plant (Cyamopsis tetragonoloba), a legume that grows primarily in India and Pakistan. The powder is rich in dietary fiber and has various applications.Just like tapioca and locust bean gum, guar gum can bind and thicken liquids, even in small amounts. It dissolves well in water and forms a gel-like substance.
Guar gum is rich in so-called soluble fibers and contributes to the maintenance of normal cholesterol levels in the blood.
What is the difference between guar gum and guar bean fibers (sunfiber)?
The difference between guar gum and guar fiber lies primarily in the way they are processed and used, although both originate from the guar plant (Cyamopsis tetragonoloba). Guar gum is made by grinding the endosperm (the inner part) of the guar bean into a fine powder. It primarily contains galactomannan, a soluble polysaccharide. Guar fiber is made from the entire guar bean (including the shell and other parts), retaining mainly the natural fibers. As a result, the fiber content is significantly higher than that of guar gum. Another difference is that it dissolves completely in water, unlike guar gum, which forms a jelly-like substance.
