Opti-lactase is a lactase enzyme produced by fermenting a selected strain of Aspergillus oryzae (a fungus). Fermentation ensures the product remains stable within a wide pH range. This is beneficial because it is then unaffected by the digestive juices in the gastrointestinal tract, allowing the lactase to be fully utilized for lactose digestion.Lactase (also known as beta-D-galactosidase), normally produced by the small intestinal wall, hydrolyzes (cleaves) lactose into its corresponding monosaccharides: glucose and galactose. This makes it easier for the body to digest these two monosaccharides. Lactase thus aids in the digestion of lactose.
