Purasana Kombucha with a spicy turmeric flavor is a slightly sparkling fermented drink made with green tea. Like all kombuchas, the brewing process begins with tea leaves, water, and sugar. The brewer then adds a symbiotic culture of bacteria and yeasts (SCOBY) to the brewed mixture. To grow healthy bacterial colonies, the SCOBY (or "mother") consumes the sugar in the tea. Kombucha is definitely not a source of sugar.Fermentation converts the polyphenols in the tea into organic acids, among other things, which gives the drink a slightly tart flavor. Another byproduct is carbon dioxide, which gives kombucha its characteristic effervescence.
