Vitals Enzyme Formula Pro is a balanced formula with various enzymes, including carbohydrate-, protein-, and fat-splitting enzymes. The product consists of an enzyme complex (BioCore® Optimum Complete) supplemented with a special gluten-splitting enzyme branded Tolerase® G. Gluten is a protein that occurs naturally in certain grains, such as wheat, rye, and barley. Because gluten is rich in the amino acid proline, it can be difficult to break down.What are enzymes?
The word enzyme comes from the Greek "enzymos," meaning "in yeast." An enzyme is a protein that can support a specific chemical reaction without being consumed or changing its form. It can break down certain substances, such as those in food, into smaller building blocks. Each enzyme has a specific pH and temperature at which its activity is optimal.
Enzyme activity
With enzymes, it's common to list quantities not in milligrams or grams, but in terms of specific enzyme activity. After all, it's not about how much an enzyme weighs, but about how well and how quickly it can break down a specific substance. This is reflected in the enzyme activity. International guidelines indicate how to measure the activity of each enzyme and how to display it on the label. The unit of measurement varies per enzyme, and various abbreviations refer to how they determine the enzyme activity of those specific enzymes. An example is DU (short for Dextrinizing Unit), which indicates how well and how quickly starch is broken down by this specific amylase into shorter carbohydrate chains (dextrins). The higher the stated value, the greater the enzyme activity.
How are the enzymes in Vitals Enzyme Formula Pro made?
There are various types of enzymes on the market. These can be derived from animal sources, plants, or microorganisms. BioCore® Optimum Complete from Deerland and Tolerase® G from DSM are both produced through a fermentation process using microorganisms (such as yeasts). These microorganisms are grown in a nutrient medium, and through fermentation, they convert the nutrients in that medium into enzymes. Microorganisms have specific preferences regarding the medium they thrive in. Therefore, for the production of BioCore® Optimum Complete, it is necessary to use some wheat and soy in the fermentation process as part of the nutrient medium. After the fermentation process, the enzymes formed are carefully filtered by the manufacturer, Deerland, to remove as much of the residual wheat and soy as possible. However, it is possible that a very small amount of these may remain in the final product, which is why this is indicated on the label.
