Erythritol is a natural sweetener found in some mushrooms, fruits (including watermelon, grapes, and pears), and fermented foods such as wine, cheese, and soy sauce.Erythritol is the only natural polyol and is produced through natural fermentation and has approximately 70% of the sweetness of regular sugar.

Erythritol contains no calories because it is absorbed differently than other sweeteners.
It is only absorbed in the small intestine and excreted through the urinary tract and therefore the calories from erythritol are not absorbed.
