The birch belongs to the genus Betula, there are about 60 Betula species, all of which occur in the Northern Hemisphere.To tap the sap from the birch, a wedge-shaped incision is made in the trunk of the birch.
Only one cut is made per trunk to collect the sap.
This cut is used for a maximum of three weeks and is covered with a covering agent after this period.
The collected juice can be drunk pure (sweet taste) or diluted with fruit juice.
