Inulin occurs naturally in the roots of plants such as elecampane, chicory, Jerusalem artichoke, dandelion, salsify, and artichoke that grow in cold-temperate regions.Because these vegetables are eaten less than in the past, the current diet is lower in inulin.
Inulin is currently extracted from the chicory root.
The unique thing about inulin is that it is a complex of fructose molecules, meaning it cannot be absorbed by the human digestive system and can therefore serve as food for the intestinal bacteria present in the large intestine.
