Red yeast rice is produced by fermenting rice with the yeast Monascus purpureus, which gives the rice a dark red color. During the fermentation process, characteristic compounds are formed, the most important of which is monacolin K. Vitals Red Yeast Rice with 2.5 mg monacolin K is based on organically grown rice that has not been treated with pesticides and is free from genetic engineering.There's a significant difference in quality between red yeast rice supplements on the market.
