The coconut pulp is semi-industrially pressed at high temperatures, causing the sugars to caramelize. The resulting oil is then deodorized, removing its caramel and coconut odors. Most other organic coconut oils are then bleached and further refined. Kokovita has only been deodorized. From a health perspective, important nutrients are lost during every processing step.
